lemon-y pesto

it’s frustrating that i can only post when it’s light out; the dingy lights in my kitchen discolor my food in unappetizing ways. my dinners are usually my most daring, as i look forward to them and mull them over all day. thus, the simple lunch: whole wheat penne with arugula pesto and greens, topped with carrot shavings and dressed with jamie’s yogurt dressing. i added lemon zest & juice to the pesto to offset the bitterness of the green and the nuttiness of the penne — success!
